Sweet & Retro Parsnip & Apple Soup
This time of year always makes me get back into the kitchen and cook! One of my favourite things to cook is soup as it is so healthy and nutritious, whilst being low on calories (as long as there's no cream involved!)
Today I got a bag of parsnips for just 50p, they needed using up, so I made a Parsnip & Apple soup which was really delicious. Here's the recipe if you would like to try it:
Serves 6 (you can freeze)
1 tbpsn olive oil in a large saucepan 600gm parnips peeled and chopped into chunks 2 medium onions chopped 600gm eating apples (or 3 medium ones) 1 litre of chicken or vegetable stock (I used 1 chicken and 1 vegetable Oxo cube) 150ml milk to add at the end pepper
Pop the onions and parsnips into the pan with the oil and gently fry for around half an hour on a low heat. This will caramelise the vegetables making them nice and sweet.
Pour in the stock and bring to the boil, now turn down the heat and simmer for about 20 minutes. Blend the soup, and add pepper to taste.
Stir in the milk, and serve. We had ours with poppy seed crackers - delicious!
