Perfectly Tropical Porridge!
Being a huge lover of porridge I am always on the look out for ways of making it even yummier!
My latest trial was to add coconut and sultanas whilst cooking, it was so lovely and Summery I thought I would share my recipe:
Perfectly Tropical Porridge for 2:
3 handfuls of porridge oats 1 dessert spoon of unsweetened desiccated coconut 1 handful sultanas water and skimmed milk in equal parts
Pop the oats in a saucepan and cover with water, now add a good splosh of milk, the coconut and the sultanas. Bring to the boil, stirring all the while, then when thickened serve with a little light sugar - you won't need a lot as the sultanas are so sweet.
Prefer to use a microwave?
Simply place the ingredients in a microwavable bowl, set the microwave to 60% and cook for about 5 minutes. Stir, and then put on high for 1.5 mins until thickened.
Oats are very healthy, helping to lower cholesterol so a great way to start the day. Oats also help you to feel fuller for longer - stopping the mid morning munchies!
