Low Cal Rice Pudding Vintage Stylee

This is our favourite recipe for rice pudding as it has no sugar and so can be enjoyed without any guilt! Even better when made in a retro kitchen!!

Low Calorie Rice Pudding

50g or 1 3/4oz Basmati Rice
500ml or 18fl oz skimmed milk
1 cinnamon stick

Bring the rice, milk and cinnamon stick to the boil in a non stick saucepan. Stir well then reduce the heat to a gentle simmer. Cook uncovered for about 20 minutes, until the rice thickens and is tender. Stir occasionally.

Remove the cinnamon stick, and serve in a bowl. Add some tinned peaches in juice, crushed fresh fruit or low calories jam - although if you are used to a low sugar diet this even tastes yummy on it's own because of the fragrant rice and cinnamon!
