Waste not Want not Lentil Curry Soup

Lentil Curry Soup - Serves 4-6
2 small onions chopped
3 small carrots chopped
2.5cm garlic paste
2 tspns Curry Powder
In a large saucepan fry the above ingredients together for 2-3 minutes with Fry Light Spray
Now add
1 & 3/4 pints vegetable stock
1 tin chopped tomatoes
1 tbspn Tomato Puree
40gm dried apricots chopped
2 tbspns Mango Chutney (or to taste)
Any left over vegetables you have lying around such as spinach leaves, salad leaves etc in the fridge
S&P
Simmer for 20 minutes, then blend until smooth. Then add:
Tin of green lentils drained and rinsed
Continue to simmer for 10 minutes and serve with Crackers, Naan or French bread - yum!
