Maple Syrup & Apricot Flapjack Recipe
200gm Dried Apricots
50gm Sultanas
1/4 pint boiling water
50gm Clover Light
100gm Maple Syrup
1 tspn Vanilla Essence
150gm Rolled Porridge Oats
approx 2 dessert spoons Dessicated Coconut
8 - 10 hazelnuts chopped in half
Preheat the oven to Gas Mark 4 / 180c / 350f
Grease and line a 8" square baking tin or a long thin tin I used one from Tesco 20 x 30cm which worked well
Pour the boiling water over the dried apricots and sultanas and microwave for 2.5 minutes. Leave to cool. In a saucepan melt the Clover Light with the maple syrup. Stir in all of the remaining ingredients, including the apricots and sultanas. Now press everything into the baking tin, levelling off with the back of a metal spoon.
Bake for 25-40 minutes until golden brown. Eat hot or allow to cool in the tin, and cut into 16 pieces. Store in an airtight container or freeze until use. Perfect for snacks, lunch boxes, desserts, afternoon teas and late night snuffles!
