Low Cal Rich Cheesey Mushroom Recipe
I haven't added a recipe to my 'retro recipe' section for months! This has been due to the fact that Mr yay! and I have been on the Weight Watchers diet. Incredibly successful we have lost over 22lbs each! That equates to almost 3 dress sizes down for me, so am very happy! I made a lovely low cal dinner last night and it made me think of updating the recipe section on my blog, so here we go:
Rich, Juicy Cheesey Mushrooms
Fry Light Olive Oil Spray 4 Large Field Mushrooms peeled and left whole 2 tablespoons Parmesan Cheese 1 Slice Weightwatchers Danish Malted Sliced Bread (or similar) - grated 3 Brazil Nuts sliced into small pieces Salt & Pepper
Vegetables & Gravy to side such as: Curly Kale Mashed Carrot and Swede Leeks
Spray an open enamel oven dish (or similar) with Fry Light, and pop in the mushrooms. Bake in the oven at 200c, turning over a few times to cook through.
In a bowl mix the grated bread crumbs, nuts, parmesan, salt & pepper. Turn the mushrooms right side up to form a cup, and sprinkle the mixture over the top towards the end of their cooking time. When golden remove from the oven.
Serve on a lovely vintage plate, with the pan juices, gravy and vegetables as above and you will have used only 4 Weight Watchers Pro Points, so pudding ahoy!
